- 5 pound Fish Fillets
- 1 box fish batter I use Zatarans
- 1/2 tps garlic
- 1/4 tps black pepper
- 1 tbps cooking oil
- 1 tps salt

Instructions
- Rinse fish well and cut into chunks about 1 inch wide. Lay on paper towel and pat dry.
- Heat pan of oil to 350f
- Mix spices and batter. Roll fish pieces in batter ….. dip in milk and re-batter if you want to gain more weight.
- Put battered fish in hot oil and cook for 3-4 minutes and then remove from oil and pat dry with paper towels. Salt to taste as you are doing this
- Serve with coldslaw and hush puppies …… don’t eat to much or you will get a roll like Capt Frank Enjoy
